Cooked ham, for example, is refined and enriched with a mixture of salt and herbs. It is then gently steamed, smoked and baked in a hot oven until a crust is formed. In South Tyrol, premium cooked ham is essential, especially at Easter, served with asparagus and the typical Bolzano sauce.
